Kavita's Minced Meat Pie

Recipe serves 4

Ingredients:

  • 500 g minced meat (preferably lean)
  • 1 medium onion
  • 3-4 cloves garlic
  • 150-250 g carrots
  • 2 medium size leaks
  • 2 sticks celery
  • 1 level teaspoon cinnamon powder
  • 1 tablespoon fresh thyme (or 1 full teaspoon dried thyme)
  • 1 full teaspoon dried rosemary
  • 2 tablespoons worcestershire sauce
  • 2-3 tablespoons tomato ketchup
  • 1 small tin (70 g) tomato puree
  • 100-125 ml red wine
  • 2 teaspoons bouillon powder
  • Salt and pepper
  • 1 tablespoon olive oil
  • Optional - Few drops of tobasco (pepper sauce)
  • 2 sachets dried potato puree
  • 75 g low fat grated cheese (10-20+)

Method:

  • Fry the finely chopped onion in the oil
  • When the onion is soft and transparent (not brown), add the meat
  • Cook the minded meat on high heat until it turns brown. If the meat leaves fat, remove with a spoon
  • Lower the heat and add the garlic
  • Add the finely chopped carrots, celery and leaks to the meat mixture
  • Add the cinnamon, thyme, rosemary and bouillon powder
  • Add the tomato puree, ketchup, worcestershire sauce
  • Add the wine
  • Stir well and cook the meat and vegetable mixture on medium heat for 20-25 minutes until the carrots are soft
  • Add salt and pepper to taste
  • Optionally, add a few drops of tobasco (pepper sauce)
  • Pour the entire mixture into a 20(b) x 28(l) x 5.5(h) cm pyrex dish (2 ltr)
  • Make a potato puree from two sachets (65g each) of dried potato puree, according to the instructions on the packet. Add 1 teaspoon of mustard to the puree
  • Spread the puree evenly over the meat and vegetable mixture
  • Finally, sprinkle with the grated cheese
  • Place the dish in a pre-heated oven for 30-35 minutes at 200 degrees Celcius

Notes: For a richer version of this recipe, replace the potato puree with a layer of puff pastry. Make a slit in the middle for the steam to escape. Make sure that pastry turns golden brown in colour.

Enjoy!
