Broccoli & Aïoli Soup

Broccoli & Aïoli Soup

Recipe serves 4

Ingredients:

  • 400-500 g broccoli
  • 500 ml vegetable stock (1 big cube = 1/2 ltr)
  • 2 small spring onions
  • 3-4 big cloves of garlic
  • Lemon juice
  • Black pepper
  • Salt
  • Nutmeg

Method:

  • Cut the broccoli and stalk in small pieces
  • Make the stock with 1 cube and 1/2 ltr of water
  • Boil the broccoli in the stock for 10-15 minutes until soft
  • Puree in a processor with the finely chopped garlic and spring onions
  • Pour the soup in a pan, add black pepper, a pinch of nutmeg and 1 teaspoon of lemon juice. Add salt to taste.
  • Bring the soup to a boil. If too chick, add 50 ml of water.
  • Finally, add 1 tablespoon of light crême fraiche or single cream
