Greek orange and honey cake

Sumptuous Mediterranean almond, honey and orange semolina cake

Ingredients Cake:

170 grams margarine (soft unsalted)

170 grams light brown sugar

250 grams semolina

3 large eggs

100 grams ground almonds

4,5 teaspoon baking powder

2 small oranges cut in chunks and pureed (after removing pits)

Ingedients Syrup:

225ml honey

5 tablespoons water

5 tablespoons orange juice

2 tablesppons lemon juice

1 cinnamon stick

Process:

Mix all ingredients except orange puree in a food processor until smooth. Add the orange puree and fold it in spoon by spoon. Grease a round 8-10 inch baking tin with paper and cover the corners as well. Pour the batter in the tin and bake for 10 minutes in a pre-heated oven at 200 degrees Celcius. After 10 minutes, reduce the heat to 180 degrees Celcius and bake further for 30-40 minutes until golden brown. Check is the cake is ready with a toothpick. If it comes out dry and clean, the cake is baked and ready to be removed from the oven. Let the cake cool.  

While the cake is cooling, make the syrup by mixing the honey, water and cinnamon stick in a pan. Bring the mixture to a boil and let it simmer for 5 minutes. Remove the pan from the heat and add the orange and lemon juice.

Once the cake has cooled, make holes with a toothpick or a sate stick/pricker. Pour the syrup evenly all over the cake spoon by spoon until it has absorbed all the syrup.

Serving suggestion: Drizzle Greek yoghurt over the cake topped with roasted almond flakes and/or pistacho nuts. Bon appetit! απόλαυσε το γεύμα σου

Pineapple French Toast

Ingredients

2 slices bread

Crushed pineapple

1-2 eggs

Rum

Mixed spices

Cinnamon

 

Process:

Butter 2 slices of bread, fill with crushed pineapple, add a pinch of mixed spices or cinnamon powder, some brown sugar and make a sandwich.

Beat 1-2 eggs, add a pinch of mixed spices, some brown sugar, a pinch of cinnamon, 1 tblsp of single cream and a bit of rum.

Dip the sandwich in the egg mixture and fry it in a little low fat margarine until both sides are golden brown.

Sprinkle with powdered or brown sugar and cinnamon.
